I made broccoli soup today. It was quite easy and only took about 30 minutes to prepare. I cooked about 8 cups of broccoli and half an onion in approximately 1 litre of chicken broth. Then I used my trusty Bamix (I love my Bamix!) to puree the mixture. I made a quick roux with flour and butter and whisked in 2 cups of half and half. I brought the cream mixture to a boil, whisking constantly, seasoned to taste with salt and pepper, and added it to the broccoli puree. VoilĂ !
