Broccoli Soup

I made broccoli soup today. It was quite easy and only took about 30 minutes to prepare. I cooked about 8 cups of broccoli and half an onion in approximately 1 litre of chicken broth. Then I used my trusty Bamix (I love my Bamix!) to puree the mixture. I made a quick roux with flour and butter and whisked in 2 cups of half and half. I brought the cream mixture to a boil, whisking constantly, seasoned to taste with salt and pepper, and added it to the broccoli puree. VoilĂ !

A Delicious Salad

I made a very simple, yet delicious salad today. I took fresh basil leaves from the farmers market and some ripe roma tomatoes and I roughly chopped both. Then I tossed them with little pearls of bocconcini, olive oil and a good balsamic vinegar. I added some freshly ground pepper and a little bit of sea salt. It tastes wondefully fresh and the cheese adds just enough richness to balance the acidity of the tomatoes and vinegar. Every bite of this salad is a glimpse of summer!
